Traditional caviar consists of raw, salted fish roe, and even though Marky's Caviar sources all its caviars exclusively from providers with stringent sanitary procedures to ensure its customers' safety, it is not recommended for young children, the elderly, pregnant women, and those with compromised immune systems to consume raw or unpasteurized seafood, as this may increase their risk of foodborne illness.
As such, we're proud to offer a growing selection of pasteurized caviars that have undergone a rigorous pasteurization treatment to ensure that everyone who should avoid consuming raw foods can still enjoy the wonderful flavors of Marky's caviar.
However, please note that the pasteurization process slightly affects the appearance and consistency of caviar, resulting in a longer shelf life at the cost of a generally darker appearance, firmer texture, and slightly reduced flavor intensity compared to the same unpasteurized caviar.
Additionally, pasteurization may require a lead time of 2 to 3 business days before the caviar can be shipped to you overnight, which may delay the delivery of the other items in your order. To avoid delayed delivery of your other items, please consider ordering them separately.
