Black and white truffles differ significantly in aroma, flavor, and usage. Black truffles, including Summer and Winter varieties, tend to have a more subtle, earthy, and nutty flavor with a less pronounced aroma, and are more widely available throughout the year. They can be used in both cooking and as a finishing ingredient.
White truffles, on the other hand, are highly aromatic with an intense, pungent fragrance and notes of garlic and shallot. They are typically used raw, shaved over dishes just before serving to preserve their aroma. Due to their rarity, shorter season, and strong aroma, white truffles are generally more prized and command a higher price.
